Nestled among the rolling hills of California's Sonoma County is a farm that is creating quite a buzz. The Lavender Bee Farm is home to millions of bees, tended to and cared for by Rick Wallenstein. For the past 10 years, Wallenstein has devoted much of this time to beekeeping and the production of gourmet honey. The bees were a natural addition to the family farm, which also cultivates three acres of lavender. The nearly 80 hives yield approximately 100 pounds of honey per year, collected between February and October. All of Wallenstein's bees have come from wild swarms, which he has caught and installed into his Kenyan and Langstroth hives. The honey produced and sold at the Lavender Bee Farm is 100% natural. The bees are not fed any artificial or man-made products and the lavender is raised without the use of chemicals. This means that the honey, a tasty byproduct of the lavender nectar collected by the bees, is raw and pure - extracted straight from the honeycomb and bottled by Wallenstein himself. He is careful not to extract more than 40% of the honey from a hive at once - making sure that the bees remain stress-free and with enough food for the hive to prosper and grow. But the honey production does comes second to Wallenstein's main goal - caring for the bees and sharing his knowledge of them with visitors to the farm. Special Thanks:
